Gluten Free Chicken Fried Rice

Did you know that today is National Fried Rice Day? I have been meaning to share my recipe with you guys and now I have the perfect reason to! We eat this literally like 3-4 times a month, not exaggerating. It’s so easy and it saves well so if I know that we have busier week then we can plan to have leftovers the following night!

There is a magical happy sauce that MAKES the dish. Lol It’s “Terry Ho’s Yum Yum Sauce the Original”. It’s not new but it’s amazing. I get mine at Target but I will link it here so you know what you are looking for! Like please buy it at Target because its only like $4 there! Also, side note, its not “healthy” by any means but SO SO GOOD. I think you could make it a bit of a healthier dish if you made it with cauliflower rice, but I haven’t tried that.

Directions

  1. Cook 1 cup of rice (I use the microwave to cook the rice because its easier/faster)

  2. If you choose to use protein, dice the protein small and season with garlic salt, pepper and salt

  3. Heat butter in the skillet and add frozen veggies

  4. Add cooked rice to the veggies

  5. Add cooked protein and coconut aminos to the skillet

  6. Cook all together until the rice gets some crispy bits

  7. Split into portions and add yum yum sauce as you like

Gluten Free at Hollywood Studios

The last stop for my small series of gluten-free options at Disney World Parks is Gluten Free at Hollywood Studios! Now when I started writing this I was realizing that there are a lot of restaurants closed at Hollywood Studios right now. They are undergoing lots of changes and I think restaurants will be changing soon. With that being said, this isn’t a list of all of the restaurants, only the ones I was able to snag a menu from while I visited. I also heard word the other day that there is another restaurant coming to Toy Story Land so I will keep my eyes open for any info on that and if any options are added for us gluten-free folk to enjoy!

Gluten Free Game Day Board

Honestly, this was SO much fun to put together. My husband helped me with this because there were so many components but it was so worth it in the end. We had a blast together doing this and that was the best part! I mean not to mention the food we got to eat after lol

Menu

Fried Ravioli

Ham & Pickle Rollup Dip

Guacamole, Salsa and chips

Buffalo Chicken Dip

16 oz of cream cheese

1 cup of buffalo wing sauce

2 shredded chicken breasts

1 1/2 cups Mozzarella

For this you will put everything together in a crockpot and let the cream cheese get gooey, mix everything together and keep warm until you are ready to serve!

Ham & Pickle Roll Up Dip

8 oz ham

16 oz dill pickles

16 oz of cream cheese

For this recipe, I put the ham and pickle into a food processor or chopper and get everything super fine. Mix it into the room temperature cream cheese. Chill in refrigerator until ready to serve. Serve cold.

Flour Mixture for batter

4 cups of flour

1 tbsp Cayenne

2 tbsp Garlic Salt

1 tbsp Salt

1 tbsp pepper

Super simple, just mix all of the ingredients together! We used the same flavors for the Chicken Parmesan Bites, Fried Ravioli and Mozzarella Sticks.

Guacamole

2 large avocados

2/3rds of a red onion chopped finely

5-8 cherry tomatoes diced

1 tablespoon of garlic salt

salt and pepper to taste

Chop everything up and mix together, super easy! I usually do this towards the beginning of prep just so all of the flavors and get worked in together. TIP: to make sure the guacamole doesn’t get brown, take plastic wrap and push it all the way down to the guacamole and make sure there is no air getting to it. It will stay green much longer this way.

Stuffed Mushrooms

4oz cream cheese

1 tsp garlic powder

1/2 cup mozzarella

8-10 mushrooms

Preheat over to 350 degrees. Combine all of the ingredients and spoon a tablespoon of the mixture into the hollowed out mushroom. Put them on the cookie sheet and bake for 10 minutes and then broil to brown the top.

Pepper Pinwheels

5 diced mini sweet peppers

4oz cream cheese

1 tsp garlic powder

1/2 cup mozzarella

1/8 cup roasted red peppers

1/8 cup diced Green chilis

3 gluten free tortillas

Combine all of the ingredients and spread onto the tortillas. Roll them up and stick them into the fridge until hardened and cut into 1/2 inch pieces.

Eight Nail Colors for Fall

Hello everyone! I hope you are having a great week so far. Something about the season change from summer to fall that makes me look at things like nail polish, lipsticks and earrings… don’t even get me started on chunky sweaters and scarves! I went into Target the other day and couldn’t help myself, there are so many yummy fall colors! I especially love “Leaf Me Be” and “Beet, Pray, Love”. I put together a collage that lets you know which color is which, just to make shopping easier! I will be sharing in Instagram stories as I change the colors throughout this fall! I can’t wait for you guys to see them.

Six Day Disney Travel Diary

Back in August I had the opportunity to go to Disney World for 6 days straight with my mom. If you get the chance to travel with one of your parents as an adult with none of your siblings… JUMP ON THAT OPPORTUNITY ASAP. Seriously, we rode all the rides, ate so many foods, sweated our butts off and made the best memories. We spent 6 days in Orlando and went to one of the parks each day that we were there. TIP: If you are going to Disney World for any longer than 4 days, just be prepared to not stay at the parks all day long each day. We closed down parks a few times but going into it we were so jazzed to stay from open to close all day errr’ day but we got there and quickly realized that it wasn’t realistic.

This was also my first time going to Disney as an adult where we stayed off property. I wrote a post called “5 Reasons to Stay on Disney Property” and you can read about that, here. Staying off property wasn’t too bad, but you can read about my reasons in that blog post Where I weigh the pros and cons. Another blog post that will be helpful for planning your trip would be my “Six Day Fast Pass Guide” and you can read about that, here. One of the things that was different about staying off property was that we needed to connect our magic bands, I have linked my favorite and in my opinion CUTEST below!

Day 1

Park: Magic Kingdom

We got to the parks pretty late this day. I flew into Orlando that morning so we got to the park around 12pm just in time for our first fast pass {Space Mountain}. We headed straight to our fast pass and then set out on our hunt for food. We decided to eat at Pecos Bill, they have gluten free options and I hadn’t checked them out so it was the first place to check off of my list. After lunch we wandered looking for the many snacks that we had on our list. We got the Lost Princess cone and Lafoo’s Brew from Gastons Tavern! We had both been up since around 3am and decided to head home after we did our other two fast passes {Peter Pans Flight and Seven Dwarfs Mine Train} . We called it a day around 5pm and went to the hotel to relax and get to bed early.

Day 2

Park: Animal Kingdom

We got to Animal Kingdom bright and early to get a start on our day. We initially planned to run to Flight of Passage but we decided to just wait until later because everyone and their mom ran there. We did go to Pandora first but just to look around. My mom had never been there and wanted to see what it was all about! From Pandora we went to get coffee at Creature Comforts which is Starbucks in Animal Kingdom. We went to our first fast pass, Dinosaur and then had lunch at Flame Tree Barbecue! I got the gluten free Pulled Pork sandwich and it honestly might be my favorite food in all of the parks. Seriously it was delish! After lunch we had our fast passes for Navi River Journey and then went to Tamu Tamu to get a watermelon rum dole whip, so yummy! We walked around awhile and tried to find hidden Mickey’s from the book Hidden Mickey’s of Walt Disney World.

We also went to Rafiki’s Planet Watch and took the drawing class at the Animation Experience and it was so cool to be able to learn how to draw a character from Disney like the artists do. After the drawing course, which took about an hour we decided to go try the bugs and grubs ice cream cone which was too cute and tasty! The last major ride of the day was Expedition Everest and I could honestly ride that ride over and over again! It’s so much fun!

Day 3

Park: Epcot

This day was probably my favorite out of all the days we spent there. We rode all of the rides in the morning, we ran to Test Track, then over to Soarin’, rode Spaceship Earth and then made our way to the Frozen ride. We spent the second half of the day wandering each of the pavilions. This paragraph won’t be too long just because I wrote a very long blog post about our day here including all of the foods and beverages. Day 4

Park: Hollywood Studios

Now this might be different with all of the Star Wars stuff that is in this park now but I can never get myself to stay at Hollywood Studios for very long. I don’t know what it is but I go through things very quickly and then I am ready to leave. This days started by us running to Toy Story Land, the line was 75 minutes when I got it in and I know now that I should have stayed in the line because it wouldn’t have been 90 minutes at all. Instead we went and rode the Alien Swirling Saucers and wandered Toy Story Land taking pictures and looking at all of the details! We ate an early lunch at Woody’s Lunch Box. I had the gluten free BBQ brisket melt and tots! After lunch we went and did our fast pass for Toy Story Mania. We decided after that ride that we needed to just bite the bullet and get in line for Slinky Dog Dash. The line was about 90 minutes long and we actually only waited about 60 minutes which was awesome. After we were done with Toy Story Land we did our fast pass for Rockin’ Rollercoaster. We grabbed an early dinner at Fairfax Fare. I had the 7 layer rice bowl with chicken and it was really good. We knew the next day we had a really long day so we decided to leave around 4:45.

Day 5

Park: Animal Kingdom

This was our second day at Animal Kingdom and we were there all day long. We ate breakfast at the hotel this morning so we could head right to riding rides. We rode Expedition Everest, watched the Up Bird show, rode Dinosaur again and then had an early lunch at Yak and Yeti. I had the gluten free bacon cheeseburger, pretty good! One of our main goals for the second day was to make sure we waited in line for Flight of Passage. We decided to get in line around lunch time because there was a drop in wait time. We waited in line for the much worth it ride, it was a blast and I know that the wait time is intimidating but oh so worth it! Grab a snack and get in line! We went from Flight of Passage to The Festival of Lion King - I love this show, it is a must see! After the show we wandered around and decided to have dinner at Restaurantosaurus in DinoLand U.S.A. I had the gluten free chicken fingers- YUM! We headed over to our fast pass for Kali River Rapids and then got in line for Rivers of Light. After the show we headed home!

Day 6

Park: Magic Kingdom

This day was particularly special, it was my moms birthday! It was so special to spend her birthday at the happiest place on earth! In the morning we ran straight to Seven Dwarfs Mine Train, we were told it would be a 70 minute wait but only waited about 30 minutes, maybe even 25. I definitely recommend running to this ride in the morning, it wasn’t this low at any other point in the day. We spent the day wandering and soaking everything in. We hit all of the big rollercoasters and our fast passes. We had passes for Space Mountain, Pirates of the Caribbean and Splash Mountain. For lunch we had reservations at Be our Guest, I had the gluten free French dip and fries and it was so tasty! I was happily surprised that they had that as a gluten-free option. One ride that we rode that I hadn’t before was the Carousel of Progress, definitely do it if you have the time! We spent some time wandering the shops on main street, trying snacks and many kinds of ice cream and riding some more rides. Dinner was at Columbia Harbour House, I got the chicken nuggets and fries, so good! We watched the fireworks at night and said our final goodbyes to our favorite place!

Gluten Free Cinnamon Pumpkin Bites

If I am being completely honest, this recipe 100% began as a play on my sugar cookies that are the base of my sugar cookie pizza. And if you are in my Facebook group then you saw a bit of the behind the scenes yesterday of me making these cookies.. well the first batch didn’t turn out as cookies and neither did the second batch. BUT for the second batch I decided to make them more of a pumpkin bar/muffin rather than a cookie and THEY TURNED OUT GREAT. I was so happy and I know you guys will love these! They can be eaten as a dessert or even breakfast, totally up to you. Enjoy!

Gluten-free-cinnamon-pumpkin-bites

Directions

  1. Preheat the oven to 350 degrees

  2. Add all of the dry ingredients to the bowl and mix until combined

  3. Add the can of pumpkin and stir until its mostly combined and then add the egg

  4. Scoop them into muffin tins (I used an ice cream scoop and it was perfect)

  5. Sprinkle with cinnamon on top

  6. Bake for 25-28 minutes

3 More Disney Bound looks from Amazon

I have found Amazon to be so helpful when trying to put these looks together because its literally a one stop shop and it will come right to your door. I mean what more can you ask for?! For this post I put together looks for Tiana, Chip and Ursula. I don’t know how I hadn’t ever thought of doing Ursula when visiting Disney before because it was my favorite one to put together! The store in Mombasa Marketplace has a whole gluten free section. You can get things like bags of cookies, chocolate protein balls, tortilla chips, seed and fruit mix, snack bars and cranberry mix. They have tons of options that you can buy and then take to eat in line while you have a long wait. In that same store I got a rice krispy treat that was pretty tasty!

Bachelor in Paradise: Popcorn Tray

Every time I watch an episode of BIP, I just sit there and can’t look away… its like when you’re at a movie theater watching a new movie and your hand just automatically goes into the popcorn and up to your mouth continuously without even having to think about what you are doing. It’s like an automated response to watching whatever you are watching. Well that’s how I feel about Bachelor in Paradise. I can’t look away and I feel like I need popcorn to complete the experience. Lol

This week I decided to just throw together a popcorn tray with tons of everyone’s favorites so that people can just pick and choose what they want from the board but you are able to give everyone something that they like with the options that you set out. Not everyone is a sour candy person and not everyone is a chocolate person (crazy people)… This board is the perfect combination of both!

What I used

Would you believe me if I said that every single thing on this tray including those cute [popcorn buckets were from the Dollar Tree?! Well you better believe it! I spent $8 and was able to put together the cutest tray to watch this weeks episodes. We usually get together on Tuesday and watch both Monday and Tuesday’s episodes in one night!

Harry Potter London Checklist

When my sister and I visited London last summer we checked off so many Harry Potter bucket list items from our lists. When we were looking for everything that we needed to visit, it didn’t seem like there was one collective list, we needed to find a couple to get the whole list of items! I have created a Harry Potter checklist for you to take on your next trip to London. I will also be creating a map of all of the locations so you can see exactly where you are going and make it very easy to navigate all of these new places for you!

With the time that we had there were some of the places that we didn’t have time to get to. But We did manage to get a lot seen in the time that we had which was so incredible! One of our favorite things was seeing platform 3/4 quarters in Kings Cross Station. There was a line to take a picture with the cart which we opted out of but still fun to see and we spent a ton of time in the shop that was right next to it. We were also surprised to see that it wasn’t on an actual platform it was just in the middle of the station. But in hindsight that makes sense due to traffic control!

St. Paul’s Cathedral and The Millennium Bridge were so fun to walk by and actually went to Millennium Bridge during the day and at night. They are right next to each other so its easy to lump these two together. But we spent a whole afternoon between the two!

These markets were absolutely amazing to walk through, we spend about 3 hours wandering Borough Market one morning and the people watching alone was amazing. Not to mention the music that was playing, the foods and all the delicious smells there were!
