Gluten Free S'mores Board

HAPPY BACHELORETTE MONDAY FRIENDS. This week I had a sweet tooth so another s’mores board it was! These are so easy to put together and you can do them inside no problem! We’ve done this a couple of times in the past for a summer party, another bachelor night and then a movie night for Cruella… BTW, have you seen that movie?! It is BEYOND good! All you need is some chocolate, s’mores stuff and a little flame! But I will put exactly what we used below so you know what to get and/or can get some ideas!

This week is obviously a S’mores Board and next week will be a Charcuterie for Three board. Later on I have a Mediterranean Charcuterie board planned and a Popcorn Bar coming your way as well! That’s about all fluff I have for you so here is what you will need! Lol

Adult Popsicles Six Ways

I know I have mentioned this to you guys before but I eat no less than 10 of those Ice Freeze popsicles a day in the summer! I felt a lot better when I did a poll and most of you eat them in the summer as well. I mean probably not 10 but you do eat them a lot lol. Over the past few weeks we have been testing different kinds of popsicles.. adult popsicles and DANG they are good! We came up with six that we really like so I decided it was time to share it with the people. They are all really simple and most are 2, maybe 3 ingredients! I’m not even really sure if you can call them recipes! It’s more like… “put these two things together”. It took about 15 minutes to make everything and I love how versatile they are! You really can make it whatever you want. You can get the popsicle bags and funnel here!

I put 2 shots in a 16 oz glass and filled the rest of the cup with the juice {and fruit if using}. Each 16 oz glass made 5 popsicles! You could definitely make them not as strong or stronger depending on what you like and how you want them to taste. But I liked them how we did it with the 2 shots per 16 oz glass.

We’ve had them made up in our freezer for a couple of weeks now and I love having one after dinner! I also took them to the beach one afternoon and they were perfect to cool us off. One other thing I did was empty the popsicle into a cup and then poor about a half shot into the cup and fill the rest with the same juice and its a good way to chill your drink without it getting all watered down! Lucky Charms Rice Krispy Treats

This is a super easy and well known recipe with a couple of added ingredients that make it so much fun for St. Patricks Day! Now that we know which vintage tee you are going to wear.. {if you don’t head to this post to figure it out!} we are going to add that perfect fun treat to your day to make it that much more tasty! This is a super simple recipe, that I literally got right off of the box of Rice Krispies and then the rest I just winged..wang..wung it? Lol you get the picture!

Valentines Day Board

This post is really just for fun! I love creating these kinds of boards even when its not a charcuterie board. I love the conversation that they start at a get together or gathering, they are the perfect centerpiece! You can make this for a Valentine’s Day Brunch or a Galentine’s get together! It would even be fun to scale it down a little bit and make for you and your significant other for a fun date night in! If you were going to do this for a date night with your SO, I would have a movie night {or we like to play Mario Party} with popcorn, this board and some other snacks that you can munch on throughout the movie or game! It’s such an easy way to create something special for you two to enjoy! If you are going the Galentine’s Day route then you can have it as a grazing situation before or after a brunch!

  • Sour Patch Kids Hearts

  • Classic Tiny Conversation Hearts

  • Twizzlers bites

  • Starburst Heart Shaped Jelly Beans

  • Dove Hearts

  • Peanut m&ms {pink, red, and white of course}

  • Strawberries

  • …anything else your heart desires!

I mention this all of the time when I create these types of boards that there are literally no rules, you can’t mess it up! You get to do whatever you want and nobody is going to critique you because it is exactly how you intended it to be! Gluten Free Cinnamon Pumpkin Bites

If I am being completely honest, this recipe 100% began as a play on my sugar cookies that are the base of my sugar cookie pizza. And if you are in my Facebook group then you saw a bit of the behind the scenes yesterday of me making these cookies.. well the first batch didn’t turn out as cookies and neither did the second batch. BUT for the second batch I decided to make them more of a pumpkin bar/muffin rather than a cookie and THEY TURNED OUT GREAT. I was so happy and I know you guys will love these! They can be eaten as a dessert or even breakfast, totally up to you. Enjoy!

Gluten-free-cinnamon-pumpkin-bites

Directions

  1. Preheat the oven to 350 degrees

  2. Add all of the dry ingredients to the bowl and mix until combined

  3. Add the can of pumpkin and stir until its mostly combined and then add the egg

  4. Scoop them into muffin tins (I used an ice cream scoop and it was perfect)

  5. Sprinkle with cinnamon on top

  6. Bake for 25-28 minutes

Bachelor in Paradise: Strawberry Milkshakes

So after watching the first two weeks of BIP, I am hooked. Even though half of the show is so disastrous, it was like I just couldn’t look away. Like I mentioned before, I want to do all desserts for this season of Bachelor in Paradise. Today I am making Strawberry milkshakes, these are easy to make in one big batch for a group of people and there is minimal mess! Plus its only 4 ingredients!

What you will need

  • 2 cups of vanilla Ice cream

  • 1 cup of milk

  • 2 cups of strawberries

  • Splash of vanilla

This is so so easy and this amount makes enough for three drinks, so if there are more people you just make multiple batches! Like I said, this was easy, yummy and there was no prep work. I literally just added all of the ingredients into the blender and turned it on. There are also so many other types you can make once you have the base down. Just sub strawberries for things like chocolate, candy bars, or other fruits if you want them!

Bachelor in Paradise: Dessert Board

Going into the third week of Bachelor in Paradise, I wanted to make something that wasn’t too complicated and something that I was able to just throw together and bring to the get together. I decided to put together a dessert spread that is much like a charcuterie board but full of one of my favorite foods, chocolate! Now I couldn’t just add 12 different kinds of candy to the board so I broke it up with a few kinds of fruit as well, very tasty! I mean lets be honest, I totally could have used 12 kinds of candy buuutttt I opted not to haha

What you will need

  • Raspberries

  • Pineapple

  • Cherries

  • Almond butter granola bites

  • GF brownie mix

  • White chocolate chips

  • Milk chocolate chips

  • Skinny dipped almonds

  • GF chocolate covered pretzels

  • Cashews

  • Chocolate covered pomegranate seeds

  • Lindor Hazelnut chocolate

Much like a charcuterie board, you are able to make it exactly the way that you want to and there is absolutely no wrong way to put this together. In the end I added a couple of extra things like strawberries just to fill the rest of the board and that is totally okay because there are no rules. I’ve mentioned this before but its my favorite part! I absolutely love putting these posts together because it lets me be creative and then also share with friends what I have created!

Bachelor in Paradise: Sugar Cookie Pizza

Now that I have gotten hooked on the Bachelorette, I figured it was time to start watching Bachelor in Paradise as well. Instead of doing appetizers for this I wanted to do strictly desserts. I really have no idea what I am getting myself into with this show so here goes nothing haha

This gluten free cookie was so simple to make and you can’t even tell that it is gf! You could easily sub gf flour for normal flour if you don’t need food to be gf. It was easy to make into a big pizza like this but another option would be individual frosted cookies and bringing a fruit tray and they can add which fruits they would like!

Sugar Cookie

1 large egg

1 tsp baking powder

1/2 tsp baking soda

2 1/4 cup gluten free All purpose flour

1/2 tsp salt

3/4 cup baking blend sugar

2 tsp vanilla

1/4 cup vegetable oil

2 oz cream cheese

8 tbsp salted butter

1 tbsp milk

1 tsp lemon zest

Directions

  1. Cream together butter, sugar, egg and cream cheese

  2. Add baking powder, baking soda, salt, vanilla, milk, vegetable oil then stir all together

  3. Add flour to the mixture and stir, then add lemon zest

  4. Roll dough out into a large circle or other desired shape. You will want it to be about 1/4th of an inch thick.

  5. Bake at 350 degrees for 25 minutes

Frosting

16 oz cream cheese

1 cup powdered sugar

8oz can of crushed pineapple

Directions

  1. Drain the crushed pineapple and then press dry

  2. Combine cream cheese and powdered sugar

  3. Add crushed pineapple and stir

I hope you love this recipe! I love that this is the base of a great gluten free cookie that can be used for a fruit pizza but it can also be used as a great roll out sugar cookie recipe used around Christmas time! ABC's Bachelorette Party: Indoor S'mores

And we are back!

I missed a couple weeks on which appetizers I was bringing, but our host was out of town so there was no need. Nonetheless, I already have the next three planned and I can’t wait to share them with you!

What we are making

Dustin and I love making s’mores, we had them at our wedding reception and we make them indoors all of the time! I thought this would be perfect to bring to Bach night because again it is so easy to prep and there is no work while you are there. The other thing that was so easy about this is it transports so easily in the tray, much like the charcuterie board I made a while back. If you missed it you can read about it here!

What you will need

-a serving tray

-a few kinds of marshmallows

-Hershey’s bars, the OG’s

-Other type of chocolate

  • Reeses peanut butter cups

  • York Peppermint patties

  • Ghirardelli salted caramel squares

-Oreos

-Wooden or metal skewers

-Graham crackers

-Chafing Dish Fuel Cans

**make sure you have a lighter on hand to light the chafing dish cans!**

The finished product

Much like the Charcuterie Board, and even the Banana Split Bar, you can totally make the presentation your own and have fun with it! I wanted to make sure that there were tons of marshmallows and fun toppings and I went from there. I also tried to make it look as full as possible. It helped that the tray I used had sides to keep everything in.

If you are new around here, each Monday I get together with a group of my friends to watch the Bachelor/Bachelorette and 99.9% of the time I volunteer to bring a snack because its so fun! If you have been watching the Bachelorette so far this season then you know Cam is quite the character. After last weeks episode I did a bit of research on ABC Cam (Always Be Cam is his ridiculous nickname for himself). I found out that he is from Austin, Texas. I started looking into popular foods from Austin and I found tons of people saying banana splits were huge there {lucky us}!! SO, for this week we had a Banana Split Bar! This was another fun and tasty shoot (haha this is probably why I always offer to bring the food). I also liked this particular week because there wasn’t a whole lot of prep work- I like easy!

Allllll I’m saying is…..

“A B C got sent home, he is on his way back to keep Austin weird… I am so glad Hannah told him to Split!”

I was on Twitter this morning and kept reading “anyone but Cam”. I hadn’t heard that one before but thought it was funny!

When I was at the store getting toppings for the banana splits there were sooo many options but I couldn’t get them all so here is what I got!

Some other things that I thought about getting were chocolate chips, pralines(yum), chocolate covered pomegranates, raspberry sauce, peanut butter sauce and oh my gosh, the list could go on! I really liked having this for a group of people because I didn’t have to worry about someone not liking the taste of what I made or having an allergy. They were able to make it their own and I didn’t have to do a whole lot but bring it to the party! It’s a win, win!

I was SO SO happy with how it turned out and everyone loved the sweet treat! The more that I look at these pictures of the banana split bar, I can see myself using this for pool parties and get togethers just because it was so easy!
